High Voltage – kveik similar to Lutra kveik High Voltage from WHC Lab is a thermotolerant dry yeast that ferments cleanly at 31–35 °C. It produces few esters, so hops and malt come through clearly, and it can be used for almost any beer style, including pseudo-lager. The yeast is especially well suited to homebrewers with limited cooling options, as it thrives at much higher temperatures than traditional strains. High temperature means fast fermentation. For breweries, that means shorter tank time and less need for cooling, and therefore lower energy use. At home, it means you can make a clean beer without a fridge, as long as you can keep it warm. Suitable for Amber Ale, Bock, Brown Ale, Double IPA, German Lager, Helles, Imperial Stout, IPA, Kölsch, Lager, NEIPA, Pale Ale, Pilsner, Porter, Red Ale, Stout and West Coast IPA. For beers above about 6.5%, use two packs. The yeast does not need rehydrating and can be sprinkled directly onto the wort at fermentation temperature, around 33 °C. Below 25 °C, fermentation becomes slow and fruity. Keep the temperature up with a heat mat, ideally with a temperature controller. Check attenuation with a hydrometer before packaging, even though fermentation is often finished in two to three days.
