SafCider AS-2 – cider yeast for fresh aroma and a round mouthfeel SafCider AS-2 from Fermentis is a dry cider yeast of the species Saccharomyces bayanus. It gives a fresh aromatic profile of apple and citrus, with pleasant fruit notes reminiscent of applesauce and good overall complexity, and a sweet, round mouthfeel. The yeast suits both sweet and dry ciders made from fresh or concentrated apple juice. AS-2 has low nitrogen requirements, assimilates fructose very well and ferments steadily and quickly. This makes it suitable for difficult fermentation conditions and blends with sugar syrups. Fruit ciders fermented with AS-2 tend to be fruitier than with the most neutral cider yeasts. Fermentis recommends 10–20 g per hectolitre. A 5 g sachet is then enough for approx. 25–50 litres of cider. At what temperature should the cider ferment? AS-2 ferments between 10 and 30 °C. Brewshop recommends fermenting cider at a steady temperature, ideally 10–15 °C, for at least 6 weeks and preferably 8 or more. Will AS-2 make my cider sweet? AS-2 gives a sweet, round mouthfeel but ferments the sugar out well. For a sweet cider, sweeten with a non-fermentable sweetener or in the glass.
