SafCider AB-1 5 g – universal cider yeast from Fermentis Fermentis SafCider AB-1 is a yeast strain from the Champagne region that can be used for all types of cider, even under difficult fermentation conditions. It gives a balanced cider with delicate notes of fresh apple and applesauce. The yeast assimilates fructose well and also suits low-gravity ciders. Technical data Yeast: Saccharomyces cerevisiae Fermentation temperature: 10–30 °C Dosage (Fermentis): 20–30 g per 100 litres, equal to approx. 17–25 litres per 5 g sachet Fermentation kinetics: regular Sedimentation: very good Pack size: 5 g How to use the yeast Sprinkle the yeast onto at least ten times its weight of must and stir gently to avoid clumps. You can also rehydrate it in ten times its weight of tap water at room temperature, wait 20 minutes and then pitch it. One 5 g sachet is therefore enough for approx. 17–25 litres. What temperature should the cider ferment at? AB-1 ferments between 10 and 30 °C. For cider we recommend 10–15 °C and a steady temperature. How long should the cider ferment? Give the cider at least 6 weeks, preferably 8 or more. Cider benefits from a long maturation. Is AB-1 suitable for cider from sour apples? Yes, AB-1 can be used for all types of cider. If you want to reduce the malic acid, a yeast such as MA33 can be an alternative.
