Ve d’Avior Son Llebre Negre 2021 11.5%

Red fruits – Violets – Fresh Cati Ribot is a third generation winegrower making natural wines under the name Ve d’Avior (“from the past” in Mallorquin) in Santa Margalida in the northeast of Mallorca. Her natural wine project was born out of the family bodega, Galmés i Ribot, where they had previously been making more conventional wines. Cati realised that the way forward was to focus on local native varieties. Having already moved away from new oak and never having used any aggressive additives, Cati stopped employing sulfur in the winery, and Ve d’Avior was born in 2019. This wine is a blend of some of these local grape varieties – Escursac, Callet and Callet Negrella. It’s fresh and fruity, yet at the same time complex, long and deep. You’ll find notes of red fruits and violets, supple dark fruits and feathery fine tannins.
