« Val is our oak-aged farmhouse ale refermented on Washington-grown Montmorency cherries from Rowley & Hawkins. Cherries have a long and storied history in beer, and Val i our interpretation rooted in that tradition-built with patience and a focus on ingredient integrity. We chose Montmorency cherries for their natural tartness and complexity, avoiding the more common sweet varieties in favor of something more structured and expressive. The result is a beer that bridges old-world inspiration and local agriculture: bright cherry candy aromatics layered with a lively, expressive yeast character. Underneath, subtle baking spice, almond skin, and oak vanillin round out a dry, structured finish. »
