Unlikely Forager BA Gin 2020

Barrel Aged Gin Saison Blue Wax, released October ’20.This was brewed in May 2019, right after our yearly dandelion blossom forage. We let this beer evolve in Barr Hill Tom Cat Gin barrels with select Brettanomyces strains for almost a year. Following its transformation, we further bottle conditioned it for 3 months prior to its release. The resulting liquid pours a golden yellow with a billowy head. It’s delicate and beautifully balanced with layered flavors of Meyer lemon, pie spice, juniper berry and assorted botanicals, a beautiful barrel presence, and a purposeful touch of balanced acidity.
