Sainte Ni Touche

The basis for Sainte ni Touche is La Pasionaria Double IPA, a strong beer with a light sweetness balanced by an abundance of bittering and aromatic hops. After fermentation, the beer is transferred into used Chardonnay barrels. The barrel aging reduces the bitterness and covers the high alcohol content. The beer simultaneously becomes a bit lighter and more sour, making it more refreshing. We�ve called it Sainte ni Touche (Untouchable Saint) because the beer hides its real character. It�s only after tasting that one discovers that it�s not at all what one was led to expect.
