Nat Rav 2021 Dixon’s Creek Cab Franc

This release features a variety rarely seen on its own, and shared with us by our mate JonJo at Cre Wines. We’ve used these same skins in the past, and loved the Black Forest Cake (chocolate and cherry) character that they provided. For this years release we’ve selected 3 base beers from 4 barrels to ferment the skins with to provide a range of complimentary oxidative (sherry and port-like), winter fruit (cherry, quince, prune, cranberry) and deep, dark notes (cola, leather, almond, raspberry balsamic, pepper). The result is a dry and complex beer with a refreshing balance of tannin and acidity. Bottled at an average age of 21 months, this beer is perfect right now for early spring drinking. Or, if you’re patient, why not put a few down in the cellar?
