Raisins – Honey – Burnt caramel We were lucky to meet with Cesar Florido Jr, a 6th generation sherry maker in Chipiona, close to Jerez, during a trip to Andalusia. Cesar Florido is one of the oldest bodegas in the area and unique in its dedication to and passion for the Moscatel de Alejandria grape. This grape loves the sandy soils and hot, dry climate of Chipiona. Most Chipiona Moscatel is sold directly to the large sherry houses in Jerez – Cesar Florido is one of the only winemakers bottling his own wines. This sherry pours sweet and honeyed with lashings of grapey fruit. It is made from grapes that are hand-selected on the vine, then dried on fields of sand for two to three weeks to concentrate the sugars. Fermentation is halted by the addition of neutral grape spirits, before the wine is spends 5-9 years aging aged in solera.
