Dry – Savoury – Red Currant Chateau La Baronne – a certified organic, biodynamic family winery near Carcassonne in the Languedoc – makes some of our favourite wines. The philosophy of the Lignères family on its estate is to preserve the biodiversity, the balance of the vines and the ecosystem that surrounds them. This is delightfully aromatic with great weight, a super-savoury style of rose vinified in amphora, with direct pressing, short maceration, indigenous yeasts, unfined and unfiltered.
