For this beer, La Sirène brewed a neutral farmhouse ale and filled it into old Burgundian white wine barrels that had held fresh Chardonnay lees from Mac Forbes Wines. Native yeasts from the Chardonnay ferment then helped guide the spontaneous fermentation, creating a beer that is funky, vinous, textural and full of personality.
