Almond – Berries – Saline Beatriz Papamija and Étienne Le Blanc are in their third year of organic conversion in the corner of the Loire, but are working above and beyond the minimum requirements for organic and even biodynamic certification. Biodiversity is the priority here, promoting life as much as possible, and disturbing as little as necessary. This is an « almost-but-not-quite » rosé (definitely on the orange spectrum) and it’s 100% delicious. It was an experiment that was due to be added to the pet nat tank, but they decided to barrel age it to see what might develop. Hand harvested, basket pressed over four hours.
