Wild – Nutty – Citrus – Floral A wonderful wine with which we pay tribute to Stefano Bellotti (RIP), a godfather of natural wine who worked organically since 1977, taking his Cascina degli Ulivi vineyards biodynamic in 1984. This white is 100% non-interventionalist, which means it can change with the seasons – it can showcase lily-like florals or citrus oils, with notes of dry spice, walnuts and quince, often slightly oxidative. Wild, alive and funky! Bellotti Cortese tastes like a Jura wine that has gone to Italy and been naturalised. Medium yellow in colour, the nose initially suggests a rich butter pound cake, with nut and citrus oils. Complex, fresh and moreish. Grapes: Cortese Pair with: Vegetable starters, pasta, soft cheese
