This is Burnt Mill’s last beer in their Hop Unlock yeast experiments, a Thiol yeast unlocking extra flavour potential from the hops. Following on from Chinook in the mash, for some extra Thiol power, the brew team has dry hopped with Strata, Mosaic and a touch of Simcoe and HBC630.
