Blackberry Lilac Honey Wild Ale 4.7% ABV | 355mlFruit leather, Wildflowers, Berry wine One bright spring morning, we joined our friends at Brewsmith to forage nearly ten kilos of fresh lilacs around Calgary. Back at the brewery, we blended them with 45kg of raw local honey from MOB Honey, and fermented the brew on our own house culture for the next few months. The resulting beer is softly floral, with honey providing a balancing backbone. Because these ingredients are so versatile, we also gave them a chance to shine alongside fresh blackberries.
