This mixed fermentation farmhouse beer was aged in one of Burning Sky’s oak foudres for six months before further ageing on damsons, blackberries and blackcurrants. These fruits line the hedgerows around the brewery at this time of year, reflecting the seasonality of this beer. The fruits balance perfectly with the acidity of Burning Sky’s house yeast culture.
