Coolship 2021 is a blend of spontaneously fermented barrel aged beers. Burning Sky uses a traditional turbid mash schedule followed by an extended boil and wild inoculation overnight in the coolship before transferring to barrels for a lengthy fermentation. Oaky, with a pleasing acidity this beer is unique to the Burning Sky landscape.
