Assemblage #1 7.2%

Assemblage 1 is a blend from four exceptional barrels; one spontaneously fermented coolship beer from 2017, the then three barrels of Saison Provision aged for at least 18 months: one in a barrel donated by Bokker and previously used to age their Geuze blends, one in a barrel previously used for ageing lambic from Girardin and lastly a barrel used for fermenting our coolship wort. Each barrel exhibited unique characteristics, blended they create this complex and harmonious beer.
